What I mean is going to a bigger carb isn't good if the engine isn't designed for it. That 40mm carb on that engine will not atomize fuel well until you get above 6,000 RPM. Same holds true for jetting and so on.

The 40mm DelOrto is way too big for that engine. Go back to the 30s if you can, or at least the 36s. There is a formula for carb sizing in the downloads. You will have to be running about 7,300 RPM for the carb to be at the efficiency level for your bore and stroke.
The synthetic oils stick pretty well. I've let my LeMans sit for some time and when I do a valve adjustment there is plenty of oil sticking to the components. The only oil I found that didn't stick well was Amsoil. I though I'd try it but drained it after I found it didn't stick like Mobil1 does.
