Just got it firing!

Hi,
I'm quite new to Guzzitech so I hope I'm not posting to the wrong forum.
10 years ago we moved to France from the US and I brought my 1980 1000 LA PS (V1000 G5) with me. It has VERY low miles (13000) and has been very reliable but recently has become undriveable. The guzzi shop where I used to take it has gone out of business and all of a sudden I have to do everything myself. That shouldn't be much of a problem since the last car I worked on myself was a 60s mustang which seems to have had the same level of technology as the guzzi.
My problem is that when I drive on the highway or when I accelerate heavily, I have an intermittent problem where the engine stops running for a half second or so and then starts again. When this problem starts, the bike starts bucking as the engine craps out and restarts and will only calm down if go very very easy on the throttle.
I am at a loss what it can be. Nothing at all similar is described in the troubleshooting portion of the Haynes manual. I thought it could be gas but discounted that since each cyclinder is fed by its own carburetor. Seems unlikely that water or something else would go through both carbs at the same time.
Does anyone have any suggestions on a place to get started. Sounds electrical but is the one area where I have no experience at all.
