Procedure is pretty much the same on the 750, bolt sizes differ a bit, and I'm finding it easier to drop both forks simultaneously as a package including the front fender, due to the fact that you cannot remove the same when mounted. Don't forget too loosen fender bolts and tube caps before dropping.
For the fork oils, Wilbers is recommending a SAE 7,5 for the Breva, which works very fine for me. If you're living in a very hot climate a stiffer oil might be better.

Once being in a hurry I've changed the fork oil by sucking the old oil using the same device I'm using for changing brake fluids. Forks won't be completely empty that way.
