On my last run, my 2013 Racer got 59 mpg! (That's US gallons, BTW.) It's often been at or near 55 mpg, but 59! This 750 sips fuel like a hummingbird! I used to own a 250 Nina that got 70 mpg on open (back) roads. But you'd think that at three times the displacement, the Guzzi would have trouble mustering 70% the economy of the little bike.
 
I average around 60 mpg, UK gallons. 2013 Stone. Less if sitting over 70mph obviously. That's after remapping using Todd's device.
 
i average about 48 mpg on my v7 iii 820 and im always stomping on it on the highway. buttery smooth engine that only gets better with time and im 300 miles away from hitting 40k miles
 
I have a 2017 Mk3 V7 (750) . I'm not an "enthusiastic" rider, but currently I'm getting 25-27 kms/litre, 58-64 mpg US and 70-77 Imp/gal. This is better than I was getting with a 1961 BSA A10 at some point way back last century.

60 mpg average on my 2019 V7III now just over 14,000 miles. Basic GTM (Todd) re-map and Leo Vince mufflers. This bike keeps getting better as the miles accumulate.
 
My great heavy 2014 Triumph Trophy SE 1215 triple got 54 MPG on an 8000 mile trip, two-up and loaded. It's all about fuel mixture and throttle management. Some bikes do it better than others.
